I was reading a book and Crab Enchilau was mentioned in it. I love seafood and this sounded great but can't find a recipe for it, I am guessing it is a Cuban dish. Any help would be appreciated. Thanks smile.gif

This recipe is for Enchilado de Camarones (Shrimp Enchilados) (*)
For Enchilado de Cangrejos (Crab Enchilados) just substitute crab meat for the shirmp

Camarones Enchilados


2 lbs. shrimp or crab
1/2 cup oil
1 onion, chopped small
3 garlic cloves, smashed or chopped
1 large green bell pepper, shopped small
1/2 cup parsley, chopped (not cilantro)
1 small can tomato sauce
1 can red pimientos
1/2 cup catsup
1/2 cup dry white wine
1 Tablespoon vinegar
1 bay leaf
1 1/2 teaspoon salt
1 teaspoon Ac'cent (*)
1 teaspoon ground black pepper
1 teaspoon Worcestershire Sauce
1 teaspoon Mexican Sauce (Tabasco)

(*) I do not recommend using Ac'cent. It is pure Monosodium Glutamate (MSG). It does intensify the taste, but it causes an allergic reaction in some people including migraines. MSG is what causes a dry mouth when eating some Chinese food)

Clean and wash the shrimp (or crab) and fry them in the oil, as soon as they turn pink, add the onion, garlic and bell pepper, and saute a bit. Add the chopped parsley, the chopped pimientos oncluding the liquid from the can, the tomato sauce, catcup, bay leaf, wine, salt, Ac'cent, ground pepper, worcestershire Sauce and Tabasco.

Cook at low heat for about 25 or 30 minutes more.

Yields 6 servings
