Cuban Chicken Spread recipe - How to Make Pasta de Pollo

This chicken spread is great for bocaditos, the
tiny sandwiches which can be served at Cuban parties. When using
Josefina's recipe, it will be easier to mix ingredients if you leave
the cream cheese out to warm to room temperature first.
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
1 cup chicken, boiled and ground
1 small jar red pimentos
1 Tsp sweet relish
4 oz cream cheese
2 hard boiled eggs
1/2 cup mayonnaise
Mix all ingredients well, spread over bread
slices, remove crust and make sandwiches. They will look prettier if
cut with a cookie cutter into different shapes.
